The tray spacing is perfect for laying out all our raw food recipes such as kale chips and crackers and even raw lasagna dishes.
My favorite part about the Excalibur dehydrator is its light weight design. The front cover easily lifts off for easy access to all the trays. Each one slides out individually which is nice when you have many different foods andrecipesdehydrating at the same time.
I have had other dehydrators in which the trays are stack one on top of the other. This is not fun because it makes it difficult to regulate each tray, especially when you might have crackers dehydrating on the first two, kale chips on the following trays and nut meat on the bottom.

The excalibur conveniently comes in 3 different sizes. A 9 tray, a 5 tray and a 4 tray.
We like the 9 tray because you can make many things at once for pretty much the same electrical use. Also the 9 tray dehydrator allows you to fit bigger bowls and dishes when making raw pad thai or raw spaghetti, for example, when a little low temp heat makes for a tasty meal.
There is, however, always some loss of nutrition, but nothing compared to the high temp's of cooking or baking.
The rule of thumb is to stay somewhere between 105 and 118 degrees Fahrenheit.
