Fudge Brownie Recipe -
A Raw Fudge Delight!













A fudge brownie recipe is a special treat we like to indulge in on occasion. We typically make them when we have some party or fun festival to attend.

They are a great dessert recipe yet "food" to sustain dancing energy and socializing with friends.

They hold up well upon travel, so they are the perfect dessert food for festive events!

Plus they are made with one of my favorite nuts, hazelnuts, that provide a nice blend with cacao beans.

We like to use whole cacao bean whenever we make cacao recipes for maximum nutrition. High quality cacao is usually a deep purple brown. But, for this recipe you can also use cacao powder if it's more convenient, or if you prefer carob powder to raw chocolate you can substitute in equal proportions.

Raw Brownie Recipe:

  • 1C cacao beans
  • 1C hazelnuts
  • 1/2 vanilla bean
  • 1/2C Thai coconut meat
  • 1/2C coconut oil
  • 4T cacao butter
  • 1/2t stevia
  • 1/2C raw honey

Directions:

  1. Soak hazelnuts in water for 1-2 hours.
  2. Grind up cacao beans in Vitamix.
  3. Add to bowl.
  4. Put soaked hazelnuts through a juice.
  5. Add to bowl.
  6. Scrap out coconut meat from 1 Thai coconut.
  7. (about 1/2C).
  8. Add to bowl.
  9. Melt cacao butter as before.
  10. Add in rest of ingredients list.
  11. Place everything in a food processor.
  12. Process until smooth.
  • Place in a square dessert tin.
  • Smooth out flat.
  • Place in freezer for 2-3 hours.
  • Remove and cut into pieces.
  • Store in an air tight container in the freezer.

I love this recipe, and so do my friends. Keep some of these brownies on hand in the freezer for a last minute dessert for a potluck or music event! Even frozen they retain their chewy texture in just a few minutes at room temp.
