A Superfood Cashew Ice Cream!

Learn how to make this rich, creamy version of an icecream recipe that gives you more than any ice cream recipe ever could in one delicious scoop.

There are a few tricks to making this raw gourmet favorite that tastes like strawberry ice cream, yet is filled with superfoods to provide you with one of the best healthy dessert recipes ever!

It is basically a simple 3 step process that you will need to begin a day before your actual ice cream making. But it is well worth the effort when you can make a batch or two to store in your freezer when you want a cold scoop of energy without the pasteurized dairy that may weigh you down.

Cashew nuts are the perfect nut for ice cream making! The nut milk they make is the most like thick, sweet cream used in traditional dairy milk varieties.

Yes, it is "orange" not pink! That's from our goji berry friends!

Superfood Ice Cream Recipe:

1) Herbal Tea Preparation:

  • 2T schizandra
  • 1T rhodiola
  • 1/2T orange peel
  • 1T goji berry
  • Decoct the above in 1 quart of spring water. See herbal tea preparation to learn how to make decoctions.

    Blend the strained liquid tea with:

    2) Nut Milk:

  • 1/2C hemp seed
  • 3/4C cashew
  • 1/2 vanilla bean
  • Blend until smooth and strain through a fine mesh strainer or nut milk bag.

    3) Ice cream:

    Use 3/4 quart of nut milk (hemp, cashew, tonic tea) and add the following:

    1. Blend in Vitamix or Blendtec until smooth.
    2. Store in fridge for 3 hours or until cold.
    3. Place in an ice cream maker and process until you have ice cream.
    4. Superfood ice cream!!

    Enjoy this raw cashew ice cream recipe with other kinds of fruit and over time, when you are an experienced ice cream maker, experiment with other flavors.
